In a large frying pan fry a clove of garlic with a tablespoon of olive oil, remove the garlic and add the walnuts and toast for 1 minute.
Meanwhile in a pot of salted water cook the cavatelli.
Add a ladle of cooking water to the pan with the walnuts and have it narrow until you create a sauce. Add flakes of summer black truffle carpaccio and another ladle of cooking water, season with salt and cook for about 3 minutes.
Drain and season the cavatelli with walnut sauce and abundant truffle carpaccio flakes.
