Our Olivet

Our olive groves are located in two areas particularly dedicated to the cultivation of olive trees, in fact there are two denominations of protected origin: DOP Canino and DOP Tuscia.

The cultivars with which we produce our oil are Canine, Frantoio, Leccino, Maurino and Pendolino.

The chosen form of breeding is polychrome pot this allows better exposure to sunlight of fruits favoring the synthesis of antioxidant compounds beneficial to health.

The olive harvesting is carried out at the invaiture, change in the color of the olive from green to purple-blackish, to ensure a higher level of quality. The olives are processed within 24 hours of harvesting precisely to obtain a final product that meets all the quality requirements: sensory and chemical-physical.
